Happy autumnal equinox; today the dark and the light are equal. To celebrate we made popovers, a delicious vehicle for lots of butter and jam that brings back memories of Montana mornings at my aunt and uncle’s ranch.
Ingredients:
- One cup whole milk
- Two large eggs
- One cup sifted flour
- Dash of baking soda
- 1/4 teaspoon salt
Directions:
Switch beaters to medium speed and add the rest of the milk. Beat on high speed for 5 minutes until the mixture is the consistency of heavy cream. Pour into very well buttered popover or muffin tins and put in an oven preheated to 425 degrees. Bake for 15 minutes then reduce heat to 350 degrees and bake for 15 more minutes. Serve at once.
