I am always looking for a fast, tasty and healthy meal for my family. One of our latest favorites is fried rice. I finally broke down and got a fuzzy logic rice cooker and the brown rice is perfect every time; it’s kind of like magic.
Once the rice is cooked add some canola oil to a fry pan and add in onions, garlic and ginger. Lightly saute these then add the warm rice. You can spice up the rice with soy sauce, fish sauce, cider vinegar, lime juice, hot pepper or whatever your family likes. Once the rice starts to caramelize a little add in handfuls of vegetables. I like to use fresh kale and early in the season will toss in frozen veggies too. Cook this until the veggies are almost done then beat a couple eggs. Stir these into the rice and cook until done. I like to garnish the dish with roasted peanuts and sliced up onion tops. Cilantro and chives taste great with this dish too.
